This delicious breakfast sandwich will make you feel like you’re eating a cheat meal, without all the guilt. While your average breakfast sandwich may contain cheese and bacon which will sky rocket your sodium, fat and cholesterol intake, this sandwich still achieves that creamy, delicious taste with a limited amount of ingredients.

In case you weren’t aware of ALL the benefits of avocados ….they’re loaded with heart-healthy monounsaturated fatty acids, they contain more potassium than bananas, they’re loaded with fiber, they can actually lower cholesterol and triglyceride levels, and they’re loaded with powerful antioxidants that can protect your eyes, in addition to numerous other benefits.

First, we’ll start by mashing up that ripe avocado you’ve so patiently waited days to brown. I like to add a dash of salt and pepper for flavor, even though it’s delicious all on it’s own. A fork will do the trick for this job, and as long as the avocado has ripened enough, it should be a next to effortless task.

Next, crack open a large egg onto a pan that’s been brought to medium heat and sprayed with some sort of non stick spray (I like the coconut oil spray). Let that cook over easy for about 3 minutes or so.

While that’s cooking pop a couple pieces of toast in the toaster just enough to brown and make the outside slightly crusty while letting the inside remain soft. The toast I used here is a “heart healthy” 12 grain toast.

This part is optional but I like to spread a tiny bit of butter on each slice (yes, I know I said this was a healthy recipe). This butter is spreadable because it contains olive oil and is salted with sea salt. None of that artificial artery clogging stuff I promise!

Next, layer on that mashed avocado you have set to the side. Slide that egg on top and voila! A tasty, healthy, and most importantly FAST breakfast you can create in less than 10 minutes. Because we all know time is of the essence, especially during the week. Not to mention it contains so many nutrients and will help to keep you full and happy throughout the morning. Add a handful of berries on the side to reap even MORE antioxidant benefits. So yes, you can have your breakfast sandwich and eat it too.
